Ingredients

or the vanilla wafer crumbs

  • 1/2 cup Earth Balance soy free butter
  • 1 cup white sugar
  • 1 egg
  • 1 tablespoon vanilla
  • 1 1/3 cups King Arthur Gluten Free Flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt

For the vanilla pudding

  • 4 large eggs
  • 3/4 cup sugar
  • 3 tablespoons king Arthur gluten free flour
  • 1/4 teaspoon xantham gum
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla
  • 2 cups Silk Vanilla Almond Milk

For assembly

  • the wafer crumbs you just made
  • 3-4 medium RIPE bananas

 

Directions

First we need to make the wafer crumbs because you can look if you want but yeah you are gonna have a time finding decent gluten and dairy and soy free wafers anywhere and the crumbs are fast and easy to make. This makes CRUMBS - you will not get it to make a cookie. Sorry. I have found how to get a delicious favored crumb but it just will not form a cookie at all.

So start by preheating the over to 350 degrees F.

Beat your butter and sugar mixture until its light and fluffy. Add the egg and vanilla and beat it some more. In another bowl combine the flour, baking powder and salt in a bowl. After blending them add them to the butter mixture and mix it up!

 

 
 

Now, pour this mixture into a cookie sheet and spread it out. Bake for 9-10 minutes and remove from oven. Use your spatula to chop it up into fine crumbs. I mean crumble it good. Now spread the crumbs back out and place it back into the oven for 3 more minutes. Remove and cool.

 
 

Now onto the pudding!!

Separate the yolks from the whites of three eggs. Set the whites aside for something else. scramble them in the morning if you want we don't need them. Add the other entire egg to the three yolks.

In a saucepan whisk together your sugar, flour, xatham gum and salt. Now stir in the eggs and the milk. Cook the mixture on low heat and stir for about 10 minutes until its thickened. Remove from heat and whisk in the vanilla.

At this point I like to chill my pudding for about 10 minutes because I DETEST brown bananas.

Slice your RIPE bananas. Dude, if your bananas are green, walk away, you came unprepared. DO NOT attempt with green bananas cause EWWWWW.

Now place a nice layer of bananas in your dish, then spread a layer of chilled pudding then sprinkle a good layer of your crumbs. Rinse and repeat this until you are done!

Chill in fridge for an hour for the best taste cause OMG cold its so much better. ENJOY!
